Tom sources and farms all the animals you eat at The Abbey Tavern. He butchers them all in the kitchen and forms a menu around every cut of meat he has on offer. He champions the consumption of the entire animal believing that all cuts, from trotter to sirloin, brain to rump and cheek to t-bone deserve a place on his menu.
